Ingredients
- 160g fresh spinach
- 4 eggs
- Salt and freshly ground black pepper
- 1 tsp vegetable oil
- 60g Cheddar, grated
- 4 mini tortilla wraps, warmed
Method
1. Heat a medium sized non-stick frying pan over a medium heat. Cook the spinach, stirring for 1 minute, or until wilted. Remove from the pan. Wipe the pan clean.
2. Lightly beat the eggs and 4 tbsp water in a jug. Season with salt and pepper. Heat the oil in the same frying pan over a medium heat. Pour in the egg mixture and cook for 1 minute, stirring, or until almost set. Add the spinach and cheese and cook for a further 30 seconds until the cheese has melted.
3. Divide the egg mixture between the tortillas. Roll up and serve straightaway.
