Ingredients
- 250g (10oz) frozen peas
- 1 garlic clove, crushed
- 1 small banana shallot (or 2 regular shallots), finely chopped
- 400g (14oz) tinned chickpeas, drained
- 40g (1½oz) baby spinach leaves, washed
- 2 tbsp tahini
- 1 x 30g (1oz) pack fresh mint (leaves only)
- 1 lemon, zest and juice
- Salt & black pepper
- 1 tbsp olive oil
Method
1. Boil the peas for 2 minutes, drain and plunge into a bowl of iced water. When cold, drain again and set aside.
2. Place the garlic, shallot, chickpeas, spinach, tahini, mint and the peas in a food processor. Whizz everything up until becoming smooth. Add the lemon zest and juice then whizz again. Season with salt and pepper as desired.
3. Transfer houmous to a shallow dish and drizzle with the olive oil.
