Ingredients
- 3 lemons, zested, then cut into chunks
- 450g (16oz) granulated sugar
- 750ml (1¼ pint) water
- 20 elderflower heads
- 30g (1oz) citric acid
- 750ml very cold sparkling water
Method
1. Place lemons in a large heavy-based saucepan, add sugar and water, simmer until the sugar has dissolved. Bring it to a boil and boil for 5 minutes.
2. Place the elderflower heads into a large, lidded container.
3. Add the citric acid to the lemon syrup then pour it over the elderflowers, cover and keep in a cool place for 48 hours, stirring occasionally.
4. Sterilise two, 750ml (1¼ pint) cordial bottles, strain everything over a muslin-lined sleeve into a large clean jug, pour the cordial into the bottles, put on the lids, label and keep in the fridge.
5. Take a clean 750ml (1¼ pint) bottle, add in 100ml of the cordial and top with sparkling water, serve chilled with slices of lemon.
