Bavarian Apple-Sausage Hash

Preparation Time: 15 minutes
Cooking time: 15 minutes
Serves: 4

If served as four portions provides 310 cals, 20g fat (of which 3g saturates), 19g sugar and 0.7g salt per portion.

Ingredients

- 2 tbsp canola oil
- ½ cup chopped onion
- 4 fully cooked apple chicken sausages or flavour of your choice, sliced
- 1 - 1½ cups thinly sliced Brussels sprouts
- 1 large tart apple, peeled and chopped
- 1 tsp caraway seeds
- ¼ tsp salt
- ⅛ tsp pepper
- 2 tbsp finely chopped walnuts
- 1 tbsp brown sugar
- 1 tbsp whole grain mustard
- 1 tbsp cider vinegar

Method

1. In a large skillet, heat oil over medium - high heat; saute onion until tender, 1 - 2 minutes. Add sausages, Brussels sprouts, apple and seasonings; saute until lightly browned, 6 - 8 minutes.

2. Stir in walnuts, brown sugar, mustard and vinegar; cook and stir 2 minutes.
