Ingredients
- 2 tbsp vegetable oil
- 1 onion, finely chopped
- 2 cloves of garlic, crushed
- 2 tsp fennel seeds
- 400g (14oz) tin of chopped tomatoes
- 120ml (4fl oz) just boiled water
- 1 tsp dried oregano
- 1 tsp dried thyme
- 60g (2½oz) black olives, pitted
- Salt and pepper
- 400g (14oz) king prawns, fresh or frozen
- 200g (7oz) feta cheese
- Parsley, chopped to garnish (optional)
Method
1. Heat the oil in a large frying pan, add the onion and fry until soft, but not coloured. Add garlic and fennel seeds and fry for another few minutes.
2. Add the tomatoes into the pan, then fill the empty can with 120ml (4fl oz) of hot water, swish around and pour into the saucepan. Add the oregano, thyme and black olives, bring to the boil and simmer uncovered for 15 minutes. Season to taste.
3. Add in prawns and cook just to heat through until they change to a pink colour. Crumble over the feta cheese and place the pan under a really hot grill to melt the cheese.
4. Scatter over chopped parsley if using. Serve immediately.
