If served as six portions, provides 162 cals, 7.5g fat (of which 2g saturates), 3g sugar and 1.1g salt per portion.
Ingredients
- 150g (5oz) plain flour, sifted
- 1 tsp baking powder
- ½ tsp bicarbonate of soda
- ½ tsp salt
- 1 tsp caster sugar, heaped
- 1 large egg, beaten
- 250ml (8½fl oz) buttermilk or 125g (4fl oz) plain yogurt and 125g (4fl oz) milk
- 1 tbsp melted butter
- Vegetable oil, for frying
Method
1. Mix together all the dry ingredients before making a well in the middle.
2. In a jug, whisk together the egg, buttermilk (or yogurt and milk) and melted butter. Add a small amount of the egg mixture into the well and mix in a little of the flour from the edges.
3. Continue to add more of the mixture, until all the egg mixture and flour are combined.
4. Heat a non-stick frying pan and brush with some of the oil. Pour a ladle full of batter into the pan. Fry until bubble appear on top, about 2 minutes. If it's browning to much, turn the heat down.
5. Flip over and cook for 1 minute more. Repeat with the rest of the batter.
