Ingredients
- 800g salmon fillets, cut into 4cm pieces
- 9 mixed peppers, deseeded and cut into 4cm pieces
- 2 red onions, cut into 4cm pieces, layers separated
- 20g fresh oregano, leave picked and finely chopped
- Zest and juice of 1 lemon
- 4 tbsp olive oil
- Salt and freshly ground black pepper
Method
1. Preheat a barbecue to a medium heat (or if cooking under the grill, preheat to high). Thread one piece of salmon onto a metal or presoaked wooden skewer, followed by around three pieces of pepper and two layers of onion. Repeat with the salmon and vegetables, finishing with a piece of salmon. Place in a large shallow glass or ceramic dish. Repeat to make 12 skewers.
2. Combine the oregano, lemon zest and juice and the olive oil in a bowl. Season with salt and pepper. Drizzle over skewers. Turn to coat.
3. Grill on the barbecue for 8 minutes, turning halfway (or transfer the skewers to a baking tray lined with foil and place under the grill for 8 - 10 minutes). Serve with salad, crumbled feta, if liked.
