Ingredients
- 400g can black beans, drained and rinsed
- 1½ tsp smoked paprika
- 120g Cheddar, roughly grated
- 2 spring onions, thinly sliced
- Salt and freshly ground black pepper
- 8 x tortilla wraps
Method
1. Combine the black beans and paprika in a medium bowl. Use the back of a fork to roughly mash. Add the Cheddar and spring onion, and mix well. Season with salt and pepper.
2. Place four of the tortilla wraps on a work surface. Spoon the bean mixture evenly over the wraps. Top with the remaining wraps.
3. Heat a medium frying pan over medium heat. Cook one quesadilla at a time, pressing down firmly with a spatula, for 5 minutes or until the tortilla is crisp and golden on the bottom. Turn over and cook for a further 3 minutes until the Cheddar has melted and both sides of the quesadilla are crisp. Remove from the heat, cover with foil to keep warm. Repeat with the remaining quesadillas.
4. Cut the quesadillas into quarters. Serve with lime wedges and garnish with micro herbs or herbs of your choice, if liked.
