Ingredients
- 550g strawberries, hulled and quartered, plus extra to decorate (optional)
- 1 tbsp lemon juice
- 2 tbsp icing sugar
Method
1. Place 450g of the quartered strawberries in a blender (or alternatively in a bowl and use a stick blender) with the lemon juice, sugar and 100 ml water. Blend until smooth.
2. Pour the puree into a shallow freezer proof container. Freeze for approximately 30 minutes.
3. Remove the dish from the freezer and scrape the surface with a fork to form crystals. Return to the freezer. Repeat every 30 minutes for about 2 - 3 hours, until the whole mix becomes a crystallised slush. Serve layered in glasses with the remaining quartered strawberries. Decorate with the extra strawberries, if using.
