Ingredients
- 4 pitta bread
- 8 tbsp tomato pasta sauce, or use passata or tomato puree
- 100g mozzarella, grated
- 100g Cheddar, grated
- 3 medium tomatoes, thinly sliced
- Salt and freshly ground black pepper
- Olive oil, for drizzling
- Freshly chopped fresh chives, to garnish (optional)
Method
1. Preheat the oven to 200°C/Fan 180°C Fan/Gas Mark 6. Put the pittas on a large baking sheet.
2. Spread the pasta sauce evenly over each pitta, leaving a small border. Top with the mozzarella and Cheddar followed by the tomato slices. Season with Salt and pepper, and drizzle with a little olive oil.
3. Bake for 8 - 10 minutes until the cheese is bubbling and golden and the edges of the pittas are crisp. Serve garnished with freshly chopped chives, if using.
