Ingredients

- 1 tbsp olive oil
- 300g frozen vegetable base mix
- 1 birdseye chilli, whole (optional)
- 2 picked green chillies, sliced (optional)
- 500g jar chilli con carne cooking sauce
- 2 x 400g can mixed beans in water, drained and rinsed
- 2 spring onions, sliced diagonally
- Fresh flat-leaf parsley leaves, to garnish (optional)

Method

1. Heat the oil in a large saucepan over a medium - high heat, add the vegetable base mix and cook for 3 - 4 minutes, stirring frequently, until any liquid has evaporated and the vegetables are starting to turn golden. Add the chillies, if using, and cook for a further 1 minute.

2. Add the chilli cooking sauce and mixed beans. Bring to the boil, then reduce the heat. Cover and simmer for 10 - 12 minutes, stirring occasionally. Add a splash of water to loosen if necessary. Scatter over the spring onion. Garnish with the parsley leaves, if using. Serve with guacamole, soured cream, tortilla chips and salsa, if liked.
