Takes: 30 - 35 minutes (plus preheating the BBQ)

Ingredients

- 2 x 225g packs of halloumi, drained

For the sticky harissa glaze:

- 2 tsp rose harissa paste
- 2 tbsp olive oil
- 2 tbsp honey or maple syrup
- 2 tbsp dried oregano
- 1 tsp smoked paprika

To serve:

- Pomegranate seeds
- Fresh mint, finely chopped
- Honey or maple syrup

Method

1. Set up your BBQ for direct cooking over the grill - you will need the charcoal nice and hot

2. Cut each block of halloumi into six equal-sized pieces. Push a skewer into the base of each piece of cheese - you can use these skewers as a kind of lollipop stick, and they will also help you turn the cheese while it is grilling on the BBQ.

3. Combine the harissa, oil, honey or maple syrup, oregano and paprika in a small bowl - this will be your glaze for the cheese.

4. Gently place the halloumi onto the hot grill, then cook for 2 - 3 minutes each side. Only turn them once, as you want to achieve a nice grill mark on the cheese. Generously brush each side with the sticky harissa glaze while cooking.

5. Before serving, sprinkle over the pomegranate seeds and fresh mint, then finish with a final drizzle of honey or syrup.
