Ingredients

- 1 butternut squash, peeled and cut into 2cm pieces (900g prepared weight)
- 12 sage leaves, chopped, plus extra to garnish
- 2 garlic cloves, grated
- 1 red onion, chopped
- 5 tbsp olive oil
- 200g mixed greens (broccoli, leeks, kale and fine green beans)
- 200g crème fraîche
- 300ml vegetable stock
- 2 tsp Dijon mustard
- 500g gnocchi
- 50g gruyère, grated

Method

1. Heat the oven to 220°C/Fan 200°C/Gas Mark 8. Put the squash, sage, garlic and onion in a casserole. Add the oil and season, toss to coat. Roast for 25 - 30 minutes until tender. Add the greens in the final 5 minutes. Meanwhile, whisk crème fraîche, stock and mustard together in a jug.

2. Stir the squash – it should be falling apart to almost a purée. Add the crème fraîche mixture and stir to combine. Stir the gnocchi in, sprinkle with gruyère and roast for 20 minutes, or until bubbling and golden. Cool for 5 minutes, then garnish with sage to serve.
