Serves: 6 (nibble size)
If served as six nibble size portions, provides 219 cals, 12g fat (of which 3.5g saturates), 15.5g sugar and 0.9g salt per portion.
Ingredients
- 2 tbsp sunflower oil
- 12 cocktail sausages
- 100g (4oz) plain flour, sieved
- 2 large eggs
- 175ml (6fl oz) milk
- A handful of fresh herbs chopped e.g. sage/rosemary
- Salt and pepper
Method
1. Preheat the oven to 220°C/Fan 200°C Gas Mark 7.
2. Liberally brush a 12-hole muffin tin with all the oil.
3. Put one sausage into the middle of each hole and roast for 15 minutes.
4. Meanwhile mix the flour, eggs, milk, herbs and seasoning together in a large bowl until smooth.
5. Pour the batter into a jug.
6. After 15 minutes, remove the heated muffin tin from the oven and quickly pour the batter mixture evenly over the sausages.
7. Quickly return to the oven and bake for 15 minutes until well risen and golden brown.
8. Serve immediately and with a small dollop of cranberry sauce or mustard in the middle.
