Ingredients
- 8 wooden skewers
- 800g (1lb 12oz) fresh chicken thighs
- 150ml (5fl oz) low-fat Greek yogurt
- 1 tbsp olive oil
- 3 tsp fresh oregano, finely chopped
- 3 tsp fresh mint, finely chopped
- ¾ tsp chilli flakes
- 2 cloves garlic, crushed
- 1 lemon, zest only
- ¼ tsp salt
- 4 pitta breads
- 1 small tub tzatziki
- 2 medium tomatoes, chopped
- ½ red onion, sliced
Method
1. Soak the skewers in a shallow bowl of water, set aside.
2. Chop the chicken thighs into large chunks and place in a medium bowl along with the yogurt, olive oil, herbs, chilli, garlic, lemon zest and salt. Mix it all together, evenly coating the chicken, cover and leave to marinate for at least 2 hours in the fridge.
3. Heat your grill to the highest setting.
4. Skewer the chicken equally onto the wooden skewers, place on a baking tray and grill for 15 - 18 minutes turning occasionally until the chicken is cooked through.
5. Warm the pitta bread, spread some of the tzatziki on the flatbread, push the chicken off the skewers onto the pitta, top with a few chopped tomatoes and red onion slices and serve.
