Sundried Tomato Crostini With Herby Cream Cheese (Vegetarian)

Preparation Time: 10 minutes
Cooking time: 15 minutes
Serves: 4

If served as four portions, provides 365 cals, 38g fat (of which 12g saturates), 4g sugar and 1.5g salt per portion.

Ingredients

- 1 baguette, cut into 12 slices
- 230g (8oz) cream cheese
- 3 tbsp parsley or basil, chopped
- 1 garlic clove, crushed
- 1 jar (8 pieces required) sundried tomatoes
- Salt and pepper

Method

1. Pre-heat the oven to 200°C/Fan 180°C/Gas Mark 6.

2. Place the baguette on baking tray and brush with the oil from the jar of sundried tomatoes. Bake in the oven for 15 minutes then move toast to a cooling rack.

3. Put the cream cheese in a bowl, stir then add the parsley or basil and the garlic. Season with salt and pepper and stir again until evenly combined.

4. When the toast has cooled, spread the cream cheese mixture over the top with 2 sundried tomato pieces on each one.

5. Finish with a grind of black pepper.

How do you do that when you only have 1 jar containing 8 pieces :D

You will of course need 24 sundried tomatoes if topping each of the 12 slices of baguette with 2 of the tomatoes.

I would assume that a jar of sundried tomatoes would be based on weight as opposed to the number it contained anyway (?), and not sure you would necessary be able to know how many are in a jar when they are compressed together, so being specific about a jar of 8 tomatoes seems misleading anyway even without the number being incorrect.

8 is about correct I use a lot of Sundried Tomatoes so buy a lot of jars
