Ingredients
- 150g (5½oz) raspberries, washed and hulled, roughly chopped
- 150g (5½oz) strawberries, washed and hulled, roughly chopped
- 1 tsp lemon juice
- 1 tbsp icing sugar
- 280g (10oz) vanilla ice-cream
- 1 tbsp fresh mint, finely chopped
Method
1. Using a hand blender or food processor, whizz together the raspberries and strawberries. Add the lemon juice and icing sugar and whizz again.
2. Divide the ice-cream between 4 bowls and pour over the coulis.
3. Finish with a sprinkle of chopped mint.
