Ingredients
- Butter for greasing
- 8 tsp jam
- 3 eggs
- 125g (4½oz) sugar
- 1 tsp vanilla extract
- 100g (3½oz) flour
- 75g (2½oz) melted butter
Method
1. Liberally grease a basin with butter. Spoon the jam into the base.
2. In a separate bowl whisk the eggs, sugar and vanilla extract until light and voluminous. In thirds, carefully fold in the flour. Fold in the melted butter.
3. Pour the mixture into the prepared basin and cover with buttered foil. Tie string around the rim of the basin and, if possible, create a handle with the string.
4. Place the basin carefully into a saucepan, then boil the kettle and fill the pan with boiling water until it reaches three quarters of the way to the top of the basin. Cover the pan with a lid.
5. Gently simmer for 1 hour and keep topping up with boiling water from the kettle if the water drops below three quarters of the way up the outside of the bowl.
6. When cooked, the pudding will rise and have a domed top.
7. Switch off the heat and carefully remove the basin from the water. Allow it to rest for about 5 minutes then serve with custard or cream.
