Corned Beef Hash

Preparation Time: 10 minutes
Cooking time: 15 minutes
Serves: 4

If served as four portions, provides 490 cals, 34g fat (of which 8g saturates), 7g sugar and 2.5g salt per portion.

Ingredients

- 1 tbsp olive oil
- 1 medium onion, finely chopped
- 500g (1lb 2oz) potatoes, peeled, cooked and diced
- 250g (9oz) carrots, peeled, cooked and diced
- 1 tsp dried mixed herbs
- 340g (12oz) tinned cubed corned beef
- 4 medium eggs
- Sprinking of chives or parsley to serve (optional)

Method

1. Heat the olive oil in a large, heavy-bottomed frying pan and cook the onion over a medium heat until translucent. Add the potatoes, carrots and the dried mixed herbs into the pan.

2. Scatter the corned beef evenly around the pan, season and cook, turning frequently until it's piping hot, just starting to brown and forming a bit of a crust.

3. In a separate pan heat some oil over a medium heat, crack the eggs into it and fry until cooked.

4. Serve the beef hash topped with a fried egg and a sprinkle of chopped chives or parsley.
