Chicken Curry (slow cooker recipe)

Preparation Time: 10 minutes
Cooking time: 3½ hours
Serves: 6

If served as six portions, provides 225 cals, 12g fat (of which 2g saturates), 6g sugar and 1.1g salt per portion.

Ingredients

- 1 tbsp vegetable oil
- 1 medium onion, finely diced
- 1 garlic, pureed
- 1 large potato, peeled and diced
- 8 chicken thighs, skinned, boned and cubed into very small pieces
- 1 red/green chilli, diced
- 1 tbsp coriander powder
- ½ tsp turmeric powder
- 2 tbsp garam masala powder
- 1 tsp salt
- 100g (3½oz) tomato puree
- 1 can tomatoes chopped/whole
- 200ml (7fl oz) water
- 1 tbsp butter
- 25g (1oz) corriander, chopped (optional)
- 25g (1oz) almonds, toasted (optional)

Method

1. On a medium heat in a saute pan, add the vegetable oil, onion and garlic and cook for 3 - 4 minutes until the onion softens.

2. Add the onions, potato, chicken, chilli, coriander, tumeric, garam masala, salt, tomato puree, chopped/whole tomatoes, water and butter to the slow cooker and cook on high for 3½ hours.

3. Before serving (optional), add the chopped coriander and toasted almonds.
