Bramley Apple & Cinnamon Muffins (Christmas Breakfast)

Ingredients

- 90g (3¼oz) light brown sugar, plus 3 tsp for topping
- 90g (3¼oz) runny honey
- 3 tbsp natural yogurt
- 6 tbsp vegetable oil
- 2 large eggs, lightly beaten
- 40g (1½oz) walnuts, crushed (½ for muffin mix, ½ for topping)
- 185g (6½oz) wholemeal flour
- 1½ tsp baking powder
- 1½ tsp ground cinnamon (1 tsp for mix and ½ tsp for topping)
- 1 tbsp lemon juice
- 200g (7oz) Bramley apples

Method

Christmas Eve

1. Weigh out the sugar, runny honey and yogurt and add the oil and 2 eggs into the same bowl, mix together, cover and leave in fridge.

2. In another small bowl add half the walnuts, flour, baking powder, 1 tsp of cinnamon, mix together, cover and leave to the side.

3. Pop 12 muffin cases in a muffin tray and check shelf is in the middle of the oven.

4. Add the lemon juice into a small bowl.

5. Peel, core and finely dice apples and add to bowl with the lemon juice, making sure they are all covered with the juice to prevent browning. Cover and refrigerate.

Christmas Day

1. Pre-heat the oven to 200°C/Fan 180°C/Gas Mark 5.

2. Drain off the lemon juice from the apples.

3. Remove covers from the pre-weighed ingredients and add the diced apple and wet ingredients into the dry bowl. Carefully combine (roughly only 3 folds), divide the mixture evenly between the muffin cases and pop the muffin tray into the heated oven.

4. Bake for 25 - 35 minutes until golden brown.

5. When ready, sprinkle the remaining walnuts on top and place on serving plate.
