Ingredients
- 8 ready made meringue nests, crushed
- 5 pineapple rings, diced
- 240g (8¾oz) plain ice cream
- 80g (2¾oz) double cream, soft whipped
- 10g (¼oz) pistachio nuts, crushed
- 4 sprigs of mint for decoration
Method
1. Gather together the meringue, pineapple, ice cream and double cream.
2. Layer the ingredients into 4 tumblers, starting with meringue, then a layer of pineapple, then cover with blobs of ice cream and top with the whipped cream.
3. Layer until ingredients are used up and finish with a sprinkling of pistachio and sprig of mint.
