Ingredients
- 1 tbsp olive oil
- 2 tbsp tomato ketchup
- 2 tbsp cider or white wine vinegar
- 2 tbsp pineapple or orange juice
- Salt and freshly ground black pepper
- 4 pork loin steaks, fat removed, cut into chunks
- 2 small red onions, each cut into 8 wedges
- 1 large pepper, deseeded and cut into 16 pieces
Method
1. Preheat the barbecue. Combine the oil, ketchup, vinegar, juice and some salt and freshly ground pepper in a large bowl. Add the pork, onion and pepper. Mix well to coat in the marinade, cover and chill for 30 minutes.
2. Meanwhile, soak 8 wooden skewers in water for 20 minutes. Thread the marinated pork and vegetables alternately on to the soaked skewers.
3. Barbecue, turning to brown on all sides, for 15 minutes or until cooked through. Serve with a tomato salad, if liked.
