Creamed Spinach & Pearl Onions

Ingredients
- ¼ cup butter, cubed
- 1 package (14½oz) frozen pearl onions, thawed and drained
- 2 cups heavy whipping cream
- ½ cup grated Parmesan cheese
- ½ tsp salt
- ¼ tsp pepper
- 10oz fresh baby spinach (approximately 13 cups)
Method
1. In a large cast-iron or other heavy skillet, heat butter over medium heat. Add pearl onions; cook and stir until tender, 6 - 8 minutes. Stir in cream. Bring to a boil; cook until liquid is reduced by ½, 6 - 8 minutes.
2. Stir in cheese, salt and pepper. Add spinach; cook, covered, until spinach is wilted, 3 - 5 minutes, stirring occasionally. Serve.
