Minty Peas & Onions

If served as eight portions, provides 134 cals, 5g fat (of which 1g saturates), 9g sugar and 0.1g salt per portion.
Ingredients
- 2 large onions, cut into ½ inch wedges
- ½ cup chopped sweet red pepper
- 2 tbsp canola oil
- 2 packets (16oz each) frozen peas
- 2 tbsp minced fresh mint or 2 tsp dried mint
Method
1. In a large skillet, saute onions and red pepper in oil until onions just begin to soften.
2. Add peas; cook, uncovered, stirring occasionally, for 10 minutes or until heated through.
3. Stir in mint and cook for 1 minute.
