Pork Chow Mein

Ingredients

- 2 tbsp peanut or vegetable oil
- 2 garlic cloves, crushed
- 2 tsp minced red chilli or chilli paste
- 300g packet pork stir fry strips, or use pork loin, sliced
- ½ small head Chinese leaf, shredded
- 1 carrot, sliced into thin batons
- 4 spring onions, finely sliced
- 120g sachet chow mein stir-fry sauce
- 300g packet fresh egg noodles, or cook dried noodles according to pack instructions
- 50g beansprouts
- 25g unsalted cashews, toasted and chopped

Method

1. Heat the oil in a wok or large frying pan over a high heat. Add the garlic and chilli and stir-fry for 10 seconds. Add the pork and stir-fry for 4 - 5 minutes until browned.

2. Add the Chinese leaf, carrot and spring onion and stir-fry for 1 - 2 minutes, then add the chow mein sauce and toss to coat.

3. Add the noodles and stir-fry for a further 1 - 2 minutes until heated through. Serve topped with the bean sprouts and cashews, and garnish with sliced fresh red chilli, if liked.
