Ingredients
- 75g mayonnaise
- 3 tbsp plain Greek yogurt
- 1 tbsp Dijon mustard
- ¼ tsp lemon juice
- 400g frozen cooked king prawns, defrosted, patted dry
- Salt and freshly ground black pepper
- 6 white finger rolls or brioche buns
- 100g lettuce leaves
- 60g red onion chutney
Method
1. In a large bowl, combine the mayonnaise, Greek yogurt, mustard and lemon juice. Stir through the prawns to coat in the mixture. Season with salt and pepper to taste.
2. Slice open the finger rolls or brioche buns and layer each with a few of the lettuce leaves. Add a spoonful of onion chutney to each, then fill with prawn mayonnaise.
3. Serve with slices of spring onion and baby rocket leaves, if liked.
