Chicken, Ginger & Cashew Nut Stir-Fry (air fryer recipe for one)

Ingredients
- 1 tsp toasted sesame oil
- 2 tsp fresh ginger, peeled and grated
- 1 small clove of garlic, crushed
- 150g boneless, skinless chicken breast or thighs, thinly sliced
- 1 small carrot, peeled and cut into thin strips
- 4 baby corn, halved lengthways
- 6 mangetout, halved if large
- 2 tbsp cashew nuts
- 60g nest of dried medium egg noodles
For the sauce:
- 2 tbsp black-bean sauce
- 2 tsp soy sauce
- 2 tsp rice wine vinegar
Method
1. In a medium-sized bowl, mix together the sesame oil, ginger and garlic, then add the chicken slices, carrot and baby corn and stir to coat.
2. Preheat the air fryer to 180°C. Place the chicken and vegetables in a single layer in the air-fryer basket and cook for 4 minutes. Shake the basket, add the cashew nuts, and cook for a further 2 minutes.
3. Meanwhile, cook the noodles for 3 - 4 minutes in a pan of boiling water, or according to pack instructions, and drain well. Mix together all the sauce ingredients in a small bowl.
4. Remove the rack and tip the chicken and vegetables into the bottom of the air fryer, adding the noodles, mangetout and sauce. Stir well to coat in the sauce and cook for 2 - 3 minutes, or until heated through. Transfer to a bowl and serve immediately.
