Halloumi Burgers

Ingredients
- 2 tomatoes, finely chopped
- ½ cucumber, finely chopped
- 25g pitted olives, chopped
- 1 red onion, finely chopped
- 2 tsp olive oil
- Salt and freshly ground black pepper
- 450g halloumi, cut into 1cm thick slices
- 1 tbsp olive oil
- 4 burger buns, split and lightly toasted
- ½ iceberg lettuce, finely shredded
Method
1. Combine the tomato, cucumber, olives, onion and 1 tsp of the olive oil in a bowl. Season with salt and pepper and set aside.
2. Heat a griddle or frying pan over a high heat. Brush the remaining oil over the halloumi slices and fry in the pan for 1 - 2 minutes on each side until charred.
3. Top the bottom of the buns with the lettuce, halloumi, and the tomato relish, and finish with the bun top. Serve with any of your favourite condiments, if liked.
