Ingredients
- 2 tbsp olive oil, plus extra for greasing
- 800g potatoes, peeled and finely grated
- 200g cooked ham, cut into strips
- 1 tbsp freshly chopped rosemary leaves
- 1 tbsp freshly chopped thyme leaves
- 1 tbsp freshly finely chopped basil
- 2 eggs, plus 2 egg yolks
- 85g Emmental (or Cheddar) cheese, grated
- Salt and freshly ground black pepper
Method
1. Heat the oven to 180°C/160°C Fan/Gas Mark 4. Grease and line a medium sized baking dish or square cake tin with baking paper.
2. Put the grated potato in a clean, damp tea towel and squeeze out the excess water. Place in a bowl, and add the ham, herbs, egg yolks, oil and cheese. Mix well. Season well with salt and pepper. Pour into the baking dish and distribute evenly.
3. Bake for 45 minutes or until golden brown and set - if starts going too dark, cover with foil. Serve warm or cold, cut into slices.
