Ingredients
- 4 medium or large potatoes
- Olive oil, for brushing
- Salt and freshly ground black pepper
- 395g can taco mixed beans in spicy tomato sauce
- 25g tortilla chips
- 120g Cheddar, grated
Method
1. Preheat an air fryer to 200°C for 3 minutes. Prick the potatoes all over with a fork. Place the potatoes in the air fryer basket, brush with a little oil and season with salt. Cook for 40 minutes, turning halfway through, or until the potatoes are tender when pierced with a knife.
2. Meanwhile, heat the beans in a small saucepan over a medium heat. Halve or quarter the potatoes and top with the tortilla chips and beans, and scatter over the cheese. Return to the air fryer, two at a time if needed, and cook for 2 minutes until the cheese has melted. Season with black pepper. Garnish with fresh coriander, and serve with sliced jalapenos, soured cream and chilli sauce, if liked.
