Halloumi & Couscous Wraps

Ingredients

- 100g couscous
- 4 roasted red peppers from a jar, or ready-made red pepper dip or a hot and spicy chilli sauce, if preferred
- Salt and freshly ground black pepper
- 1 tbsp olive oil
- 200g halloumi, sliced
- 4 large flour tortilla wraps
- ½ cucumber, sliced into batons
- ½ lettuce, roughly chopped
- 2 tomatoes, thinly sliced

Method

1. Place the couscous in a heatproof bowl, then pour over enough boiling water to just cover. Cover the bowl, and leave for 5 - 10 minutes until the water has been absorbed.

2. Meanwhile, put the peppers in a blender or food processor with a little oil from the jar and blitz until smooth. Fluff up the couscous using a fork, then stir in the pepper sauce. Season with salt and pepper, then leave to cool.

3. Heat the oil in a frying pan over a medium heat. Cook the halloumi for 2 minutes on each side until lightly browned, then drain on kitchen paper. Meanwhile, heat the wraps according to the pack instructions.

4. Divide the couscous and halloumi between the wraps and top with the cucumber, lettuce and tomato. Fold the top and bottom of the wrap over the filling, then fold over the two sides and wrap tightly. Slice each wrap in half and serve straight away.
