Takes: 1 hour 10 minutes (plus cooling time)
Serves: 10 (slices)

Ingredients

- 120g butter, softened, plus extra for greasing
- 200g mixed dried fruit
- 60g dried figs, finely chopped
- 65ml apple juice
- 160g caster sugar
- 4 eggs, lightly beaten
- 120g plain flour, sifted
- 30g self-raising flour, sifted
- 35g blanched almonds, roughly chopped

Method

1. Preheat the oven to 180°C/160°C Fan/Gas Mark 4. Grease a 12cm x 23cm loaf tin and line with baking paper, extending up and over the short sides of the tin. Combine the dried fruit, figs and apple juice in a small saucepan over a medium - high heat and bring to the boil. Remove from heat and leave to cool to room temperature.

2. Using an electric mixer, beat the butter and sugar together in a bowl for 5 minutes until fluffy and pale. Add the eggs to the mixture, one at a time, beating well between each - add a spoonful of flour if the mixture starts to split. Add the flour, and beat in briefly until combined. Fold in the soaked fruit and liquid.

3. Spoon the mixture into the tin and sprinkle over the almonds. Bake for 1 hour or until risen and a skewer inserted into the middle comes out clean. Leave to cool in the tin for 10 minutes, then turn out onto a wire rack and leave to cool completely. Serve cold or lightly toasted with butter.
