Ingredients
- 1 tsp fennel seeds
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 2 tbsp olive oil
- 1 tbsp honey
- 1 tbsp tomato purée
- 1 tbsp harissa
- 8 caramelised onion sausages
- 2 red onions, cut into thick wedges
- 1 large butternut squash, peeled and cut into 2cm thick slices
- Small handful of parsley, finely chopped
- Steamed new potatoes and greens, to serve (optional)
Method
1. Heat the oven to 200°C/Fan 180°C/Gas Mark 6. Combine the fennel, paprika, cumin, oil, honey, tomato purée and harissa in a large bowl. Tip in the sausages, onions and squash, and toss gently to evenly coat everything.
2. Tip into a large roasting tin and spread out into an even layer. Roast for 30 - 40 minutes, stirring occasionally to ensure everything is evenly browned. Sprinkle over the parsley and serve with steamed new potatoes and greens, if liked.
