Cheeseboard Pineapple Tree

Ingredients

- 1 pineapple, peeled and carved into a cone shape
- 750g - 850g assorted hard cheeses, such as flavoured Cheddars & aged red Leicester, some cut into 2cm cubes, the rest cut into 1cm thick slices
- 220g tub baby bocconcini or mozzarella pearls, drained
- 125g brie, cut into small wedges
- 125g baby plum tomatoes
- 15 green olives
- Fresh rosemary sprigs, to garnish

Method

1. Use a 3cm star-shaped pastry cutter to cut stars from some of the cheese slices. Use a 5cm cutter to create 1 larger star for decorating the top of the pineapple tree.

2. Thread the hard cheese cubes, cheese stars, bocconcini, brie, tomatoes and olives onto toothpicks. Secure the prepared ingredients to the pineapple starting from the bottom and working your way around, then up, until covered.

3. Fill any gaps with the rosemary sprigs. Thread the 5cm cheese star onto a toothpick and secure to the top of the pineapple tree to finish. Serve immediately.

Admin note: This recipe was originally titled Cheeseboard Christmas Tree, hence the stars.
