Pear & Sherry Sparkle (alcoholic beverage)

Ingredients
- 1 pear, cored and diced
- ½ tsp caster sugar
- 150ml dry sherry
- 6 long rosemary sprigs
- 600ml sparkling wine, chilled
Method
1. Place the pear in a small saucepan and sprinkle the caster sugar over. Stir in 4 tbsp cold water, then simmer over a medium heat for 8 - 10 minutes until the pear has broken down.
2. Pour the mixture into a liquidiser and blend until smooth. Pour into a container and leave to cool.
3. Divide the pear purée between six glasses. Pour the sherry between the glasses, then add a sprig of rosemary. Top up with the sparkling wine. Serve immediately.
