Peanut Butter Beef Noodles (slow cooker recipe)

Ingredients

- Low-calories cooking spray
- 350g beef strips
- 1 onion, peeled and sliced
- 1 red pepper, deseeded and sliced
- 3 garlic cloves, peeled and crushed
- 2cm piece of root ginger, peeled and finely grated
- 150ml plant-based coconut drink
- 1 tbsp soy sauce (light or dark)
- 1 tbsp honey
- 2 tbsp peanut butter
- 1 tbsp mild curry powder
- 1 vegetable stock cube
- 1 tbsp cornflour
- 2 nests of egg noodles (approximately 50g each)
- 100g long-stemmed broccoli, sliced in half lengthways
- 80g mangetout, sliced in half lengthways
- 2 spring onions, finely sliced

Method

1. Spray a large frying pan with low-calorie cooking spray and place over a medium heat. Add the beef, onion, pepper, garlic and ginger. Fry for 5 minutes until browned, then add to the slow cooker pot.

2. In a jug, combine the coconut drink, soy sauce, honey, peanut butter and curry powder. Mix until smooth, then pour the mixture over the beef. Crumble over the stock cube.

3. Combine the cornflour with 1 tbsp water in a small bowl and mix until smooth, then pour into the slow cooker and mix. Cover with a lid and cook on high for 2 hours

4. After this time, add the egg noodle nests, submerging them into the beef mixture and place the broccoli and mangetout on top. Re-cover and cook for 20 - 25 minutes, stirring halfway through until the beef is tender, the noodles and vegetables cooked, and the sauce thickened. Serve, sprinkled with the spring onions.
