Duck Breasts With Cherry Sauce

Cooking time: 25 minutes
Serves: 4 persons

No nutritional information available, but this is a Slimming World recipe.

Ingredients

- Low-calorie cooking spray
- 4 duck breasts, skinned, all visible fat removed
- Boiled mashed potatoes, to serve
- Boiled green beans, to serve

For the cherry Sauce

- 2 red onions, finely chopped
- 100g (4oz) cherries, pitted (or use frozen cherries, thawed)
- 2 tbsp red wine vinegar
- 1 tsp coriander seeds, crushed
- 1 level tbsp redcurrant jelly
- 1 - 2 level tbsp sweetner
- 150ml (¼pt) boiling chicken stock
- 1 level tbsp chicken gravy granules

Method

1. Preheat the grill to medium - hot.

2. Spray the grill rack with the cooking spray. Season the duck breasts and grill to your liking (3 - 4 minutes each side for rare; 4 - 6 minutes each side for medium; and 6 - 8 minutes each side for well done).

3. While the duck is cooking, make the sauce. Spray a pan with the cooking spray and place over a medium heat. Add the onions and cherries and stir-fry for 5 minutes. Add the remaining sauce ingredients and cook for 10 minutes or until thickened.

4. Slice the duck breasts, divide between plates and serve hot with the cherry sauce and the mashed potatoes (without using butter or milk) and green beans.
