Ingredients
For the meat:
- 500g (20oz) diced leg of lamb
- 3 tbsp tikka paste
- 150ml (5fl oz) plain yogurt
- 2 medium red peppers, peeled and each cut into 6 wedges
- 3 small red onions, peeled and each cut into 6 wedges
For the raita:
- ¼ cucumber, grated, skin on
- 200ml (7fl oz) plain yogurt
- 1 tbsp fresh mint leaves, chopped
- ½ tsp salt
Method
1. Toss the lamb, tikka paste and yogurt into a bowl and mix together to coat all of the meat.
2. Pre-heat the grill to its highest setting. Divide the meat, peppers and onion equally into 6 portions.
3. Thread metal or wooden skewers with chunks of meat interspersed with pepper and onion wedges and set aside to marinate for 10 minutes.
4. Place the ingredients for the raita into a bowl, mix everything together.
5. Grill the kebabs, turning the skewers often to ensure even cooking, for 12 - 15 minutes.
6. Serve while hot with the raita.
