Cooking time: 15 minutes
Serves: 4

No nutritional information available, but this is a Weight Watchers recipe.

Ingredients

- 100g (3½oz) orange sweet potato, chopped
- 2 tsp Dijon mustard
- 20g (1oz) baby spinach leaves
- 120g (4oz) lean beef rump steak or 150g (5oz) beef rump steak, fat trimmed
- Oil spray

Method

1. Cook sweet potato in a small saucepan of boiling salted water for 10 minutes or until tender. Drain well. Return to pan with mustard. Mash until a coarse puree. Stir through spinach and season.

2. Meanwhile, season steak. Heat a chargrill over high heat and lightly spray with oil. Chargrill steak for 1 minute each side and rest for 2 minutes before serving with mash.
