Ingredients
- 250ml (9fl oz) fresh orange juice
- Zest 1 large orange
- 200g (7oz) dates, chopped
- 1 apple, grated
- 75g (2½oz) olive oil
- 110g (4oz) wholemeal spelt or einkorn flour
- 1 tbsp cocoa
- 1 tsp bicarbonate soda
- 1 tsp baking powder
- ½ tsp salt
- 1 tsp ginger
- 1 tsp cinnamon
- 2 eggs, medium, beaten
Method
1. Preheat the oven to 180°C/Fan 160°C/Gas Mark 4 and grease an 18cm (7in) oval pudding dish.
2. Put the orange juice, zest, dates and apple into a saucepan. Bring to a boil, stir occasionally. Stir in the oil. Leave to fully cool.
3. Sieve the flour, cocoa, bicarbonate soda, baking powder, salt, ginger and cinnamon into a bowl.
4. Whisk the eggs into the date mixture, mixing well together.
5. Pour the date mixture into the flour and whisk again. Put the batter into the tin, bake for 35 minutes or until an inserted skewer comes out clean.
6. Remove from the oven, serve just warm with some fat-free Greek yogurt and top with extra fruit if desired.
