Ingredients
- 2 tbsp vegetable oil
- 1kg (2lb 2oz) beef shin on bone
- 1 onion, peeled and finely chopped
- 2 carrots, peeled and finely chopped
- 2 celery sticks, finely diced
- 2 garlic cloves, crushed
- 2 tsp dried sage
- 4 strips of orange peel
- 400g (14oz) tomatoes, quartered
- 200ml (7fl oz) stock
- Salt and pepper
Method
1. In a casserole dish, heat the vegetable oil, add the beef shin and brown well on both sides. Remove from the casserole dish and place on a plate.
2. Add the onion, carrot, celery and garlic to the casserole dish and cook until soft.
3. Return the beef to the casserole dish and add the sage, orange peel, tomatoes, stock and salt and pepper. Cover the dish and cook on a gentle heat for 4 - 5 hours or until the meat has cooked.
4. Roughly half an hour before serving, remove the lid and allow the sauce to reduce.
5. Serve with garlic mash (serving suggestion).
