Cooking time: 25 minutes
Serves: 8

If served as eight portions, provides 398 cals, 13g fat (of which 3g saturates), 5g sugar and 0.8g salt per portion.

Ingredients

- 3⅓ cups uncooked whole grain spiral or penne pasta
- 4 cups cubed cooked chicken breast
- 820g (29oz) tinned tomato sauce
- 410g (14½oz) tinned no salt added diced tomatoes, drained
- 280g (10oz) packaged frozen chopped spinach, thawed and squeezed dry
- 130g (2¼oz) tinned sliced ripe olives, drained
- ¼ cup thinly sliced red onion
- ¼ cup chopped green pepper
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 cup shredded mozzarella cheese
- ½ cup crumbled feta cheese
- Chopped fresh oregano or fresh basil (optional)

Method

1. Preheat the oven to 200°C/Fan 180°C/Gas Mark 6. Cook pasta according to package directions; drain. In a large bowl, combine the pasta, chicken, tomato sauce, tomatoes, spinach, olives, onion, green pepper, basil and oregano.

2. Transfer to a 13in x 9in baking dish coated with cooking spray. Sprinkle with cheeses. Bake, uncovered, until heated through and cheese is melted, about 25 minutes. If desired, sprinkle with fresh oregano or basil.
