Wild Garlic Potato Cake

Preparation Time: 20 minutes
Cooking time: 30 minutes
Serves: 6

If served as six portions, provides 138 cals, 6g fat (of which 1g saturates), 1g sugar and 1g salt per portion.

Ingredients

- 600g (1lb 5oz) potatoes, peeled and grated
- 50g - 100g (1¾oz - 3½oz) wild garlic, washed and chopped
- 1 egg
- Salt and pepper
- 2 tbsp olive oil

Method

1. Preheat the oven to 200°C/Fan 180°C/Gas Mark 6.

2. Place the grated potato onto a clean tea towel and squeeze out any excess water.

3. Add the potato, garlic, egg and seasoning to a large bowl and mix well.

4. Add 1 tbsp of oil to a large frying pan, heat, add the potato mixture, pat down and thin out to the width of the pan. Adjust the heat to prevent burning and fry for 10 minutes.

5. Lay a large plate over the pan and invert it so the undercooked side of the mixture is on the bottom of the plate. Add 1 tbsp oil to the pan, heat, then slide the potato back in. Heat for another 10 minutes.

6. Again, place the plate over the pan and invert it. Place the plate (make sure it is heat proof) into the oven for 10 minutes, to ensure the moisture dries out, then serve warm.
