Caribbean Chicken Stir Fry

Preparation Time: 10 minutes
Cooking time: 15 minutes
Serves: 4

If served as four portions, provides 419 cals, 6g fat (of which 1g saturates), 17g sugar and 0.2g salt per portion.

Ingredients

- 2 tsp cornstarch
- ¼ cup water
- 450g (1lb) boneless skinless chicken breasts, cut into ½ inch strips
- 2 tsp Caribbean jerk seasoning
- 425g (15oz) tinned mixed tropical fruit, drained and coarsely chopped
- 500g (17½oz) ready to serve brown rice
- Cooking spray

Method

1. In a small bowl, mix cornstarch and water until smooth.

2. Coat a large skillet with cooking spray; heat over medium - high heat. Add chicken; sprinkle with jerk seasoning. Stir fry 3 - 5 minutes or until no longer pink. Stir cornstarch mixture and add to pan. Add fruit. Bring to a boil; cook and stir 1 - 2 minutes or until sauce is thickened.

3. Meanwhile, heat rice according to package directions. Serve with chicken.
