If served as four portions provides 175 cals, 11g fat (of which 1g saturates), 10g sugar and 0.3g salt per portion.
Ingredients
- 450g (1lb) parsnips, peeled and cut lengthways
- 3 tbsp olive oil
- 1 pinch dried thyme or rosemary
- 1 tbsp cumin
- ½ tsp chilli flakes
- 1 tbsp honey
Method
1. Preheat the oven to 200°C/Fan 180°C/Gas Mark 6.
2. Add the parsnips to a pan of salted water and boil for 5 minutes. When slightly softened, remove from the water and set aside to cool and dry.
3. In a mixing bowl add the olive oil, thyme or rosemary, cumin and the chilli flakes. Mix together then add in the parsnips, marking sure they are well coated.
4. Spread the parsnips out on a lined baking tray, season and bake in the oven for 25 minutes until they start to brown.
5. Remove from the oven, drizzle over the honey and put back in the oven for 2 - 3 minutes. Check they don't burn.
6. Remove from the oven and serve immediately.
