Ingredients
- 200g (7oz) tomato ketchup
- 4 tbsp char siu sauce*
- 2 garlic cloves, crushed
- 4 tbsp soft brown sugar
- 4 tbsp cider vinegar
- 1 tbsp smoked paprika
- 1 tbsp ground cumin
- 12 pork belly slices
- 150g (5oz) radishes, sliced
- ½ white cabbage, shredded
- 4 spring onions, thinly sliced
- 2 carrots, grated
- 100g (4oz) mayonnaise
- 2 tbsp lemon juice, plus extra wedges to garnish (optional)
- Salt and freshly ground pepper
*If unble to source, 4 tbsp hoisin sauce with a squeeze of honey can be used as an alternative.
Method
1. Preheat the barbecue. Combine the tomato ketchup, char siu sauce, garlic, sugar, vinegar, paprika and cumin in a large shallow, non metallic dish. Transfer half the sauce to a jug, cover and chill. Add the pork belly slices to the dish and turn to coat in the marinade. Cover and chill for 30 minutes.
2. Drain the pork from the marinade, discarding the marinade. Barbecue over a high heat, brushing occasionally with the reserved sauce from Step 1, for 5 minutes on each side or until charred and cooked through. Remove, cover loosely with foil and rest for 5 minutes.
3. Combine the radish, cabbage, spring onion and carrot in a bowl. Combine the mayonnaise and lemon juice in a separate bowl. Season with salt and freshly ground black pepper.
4. Serve the pork with the salad and mayonnaise dressing, garnish with lemon wedges if desired.
