Cooking time: 20 minutes
Serves: 10

If served as ten portions, provides 361 cals, 48g fat (of which 18g saturates), 9g sugar and 0.4g salt per portion.

Ingredients

- 1 pack ready rolled puff pastry
- 1 egg, beaten
- 3 tbsp demerara sugar
- 200ml (7fl oz) fresh cream
- 1 tsp vanilla extract
- 250g (9oz) mascarpone cheese
- 500g (1lb 2oz) fresh, frozen (defrost before use) or tinned fruit
- Icing sugar, for dusting

Method

1. Preheat the oven to 200°C/Fan 180°C/Gas Mark 6 and line a large baking tray with parchment paper.

2. Unroll the puff pastry and cut into half lengthways, then cut each half into 5 slices. Take a sharp knife and score a line 1cm (0.4in) in from the edge, around all sides of each piece of pastry. Do not cut all the way through the pastry.

3. Place the pastry on the tray, brush with the egg and scatter the sugar all over the slices. Bake for 20 minutes until puffed and golden; the pastry will rise up.

4. When the pastry is cool, whip the cream with the vanilla extract, fold in the mascarpone cheese and spread a little of the cream on top of the pastry slices.

5. Top with your choice of fruit and finish with a dusting of icing sugar.
