Ingredients

- 4 chicken breast fillets, cut into 2cm chunks

For the marinade:

- 500g natural yogurt
- 15g root ginger, peeled and grated
- 3 garlic cloves, peeled and finely grated
- 1 tbsp curry powder
- 2 tbsps mango chutney
- Grated zest and juice of 1 lime
- ½ tsp ground cinnamon
- 1 tbsp coriander seeds, dry-roasted then ground in a pestle and mortar
- Salt and freshly ground black pepper

For the mango dipping sauce:

- 200g natural yogurt
- 2 tbsp mayonnaise
- Grated zest and juice of 1 lime
- 1 fresh ripe mango, skin and stone removed, the flesh cut into small chunks
- 15g fresh coriander, finely chopped
- 1 tbsp mango chutney
- Salt and freshly ground black pepper

Method

1. Mix together all the marinade ingredients in a large bowl with a little salt and pepper. Add the chicken chunks and mix well to combine. Leave to marinate in the fridge for as long as you can - the longer the better.

2. Preheat the grill to high or alternatively heat the barbecue.

3. For the dipping sauce, combine and the ingredients together with a little salt and pepper and keep chilled while you cook the chicken skewers.

4. Thread the marinated chicken chunks onto skewers. Place under the grill or on the barbecue and cook, turning often, for 8 - 10 minutes or until golden and cooked through.

5. Serve the skewers alongside the dipping sauce and some extra lime wedges or coriander.
