Ingredients
- 2 tsp olive oil
- ¼ onion, chopped
- 1 garlic clove, crushed
- 1 small tomato, diced
- A few fresh tarragon leaves
- ½ x 400g (14oz) can cannellini beans, drained and rinsed
- Salt and freshly ground black pepper
- 1 skinless and boneless chicken breast fillet, halved lengthways
Method
1. Heat half the oil in a small pan over a medium heat. Add the onion and cook for 4 - 5 minutes then add the garlic, tomato, tarragon, beans and 100ml (3½fl oz) water. Season with salt and pepper. Simmer for 5 minutes, until the tomato is soft and the beans are heated through.
2. Meanwhile, heat the rest of the oil in a small frying pan over a medium heat. Season the chicken and cook for 3 - 4 minutes on each side or until golden and cooked through. Spoon the bean stew onto a warmed plate and top with the chicken. Serve with boiled new potatoes.
